Clairin Sonson 2021 Rum - 51% 70cl

Clairin Sonson is the fifth sugar cane spirit to join Spirit of Haiti’s range of single estate clairins.

It originates from Cabaret, a village located in the district of Arcahaie in the north-west of Port-au-Prince.

The sugar cane spirit is elegant, with flavours of cut grass, basil and lemongrass and tropical fruit notes with fresh cane juice, ginger, sweet pepper and liquorice.

Clairin Sonson uses the mineral Madame Meuze sugar cane variety which once harvested is pressed and slowly reduced to syrup and naturally fermented with wild yeast.

The distillation takes place in a pot still heated over an open fire. The clairin is then bottled without any reduction or additions.

Clairin Sonson is best enjoyed neat or over ice but also lends itself well to a wide range of classic rum cocktails.
